 Bachelor of Science degrees from the Department of Nutrition, Hospitality and Human Services will be awarded upon the completion of the following requirements:

  • Meet the university's degree requirements as described in the section on Academic Policies and Procedures
  • Complete the Family and Consumer Sciences core curriculum requirements: 1) FCSC 4301 Senior Seminar 2) FCSC 4367 Field Experience
  • Attain a 2.0-grade point average in Department courses
  • Complete one of the Family and Consumer Sciences degree programs described in this catalog.

Family Studies

The Family Studies program prepares the student for careers with community service agencies that serve children and families. Courses equip the student to assist individuals and families in the pursuit of optimal personal development and strong family relationships. A specialization in Family Studies also provides a rich foundation for graduate education in areas such as family law, social science research, and marriage and family therapy. In their final year, students participate in a field experience with an approved social service agency of individual interest.

Family Studies - Family and Consumer Sciences Teacher Certification Concentration

The teacher certification program provides professional training for careers requiring technical knowledge of family and consumer sciences, as well as expertise in instructional methods. Students must meet admission and certification requirements of the ·¬ÇÑÉçÇø University Teacher Education ·¬ÇÑÉçÇø outlined elsewhere in this catalog. Several courses in the FCS Teacher Certification degree plan are taught through the Texas Family and Consumer Sciences Distance Education Alliance. The Alliance is a statewide network of Texas universities offering on-line courses to maximize educational resources through inter-institutional collaboration. During academic advising, students are made aware of Alliance course offerings.

Fashion Merchandising

The Fashion Retailing and Merchandising specialization provides professional training for positions in fashion coordination, visual merchandising, buying and retail management. The curriculum includes on-the-job training through a field experience program. Students have opportunities to study in international fashion centers.

Hospitality Administration - Dietetics

This academic curriculum is accredited by the Commission on Accreditation for Dietetic Education of the Academy of Nutrition & Dietetics (formerly American Dietetic Association) as a Didactic ·¬ÇÑÉçÇø in Dietetics (DPD). Graduates of the program are eligible to apply for an AND-accredited dietetic internship at ·¬ÇÑÉçÇø and/or elsewhere. After ·¬ÇÑÉçÇøful completion of an internship, an individual is eligible to take the Registration Examination for Dietitians and, upon passing, become a Registered Dietitian.

Hospitality Administration - General Hospitality

The Hospitality Administration program is designed to provide students with the competencies necessary for ·¬ÇÑÉçÇø in the hospitality and travel industry. The program prepares students for a wide variety of management careers, including positions in hotels, restaurants, resorts, private clubs, catering operations, events centers, school and hospital food services, cruise ships and other transport services, as well as procurement and vendor supply. Students may specialize in food and beverage or lodging.

Hospitality Administration - Culinary Arts

The Hospitality Administration- Culinary Arts program features an accredited culinary arts certification (American Culinary Federation Foundation Accrediting Commission). The program prepares students and provides practical and managerial expertise in the field of culinary arts management. Students may graduate as certified culinarians. Scholarships are available from local, state, and national restaurants, chefs, and hotel and lodging associations.

Nutrition

The Nutrition degree program provides training and preparation for positions in the community, food service management and private practice. The program prepares students to improve the nutritional health of various groups, such as pregnant women, infants, young children, or the elderly. Students also learn valuable skills in nutrition education and counseling which supports healthy people of all ages desiring to improve their overall nutritional health and wellness.

Nutrition - Dietetics

Nutrition Communication Certificate - 18 Hours

This certificate focuses on the integration of nutrition and communication knowledge to provide accurate and cohesive nutrition messaging through a variety of media platforms. It will also provide students with an interdisciplinary approach in gaining the knowledge and skills necessary to properly disseminate nutrition education information.

The certificate will provide a distinctive opportunity to increase students' knowledge areas not traditionally addressed in individual disciplines.

Degree Requirements

All graduate students in the department are required to complete FCSC 5300 and a graduate statistics course. The remainder of each student's program of study is developed according to the student's professional goals and interests.

Thesis route: This option consists of 30 credit hours. The thesis counts for six hours and the course work comprises 24 hours. Six credit hours may be taken in other departments.

Non-Thesis route: A student electing this option will complete 36 hours of course work, 12 of which may be taken in other departments. Non-thesis students are required to pass a comprehensive written and oral exam covering course work completed during the graduate program.

Master of Science, Nutrition

The Master of Science in Nutrition is a 36-hour program that is completed 100% online. The program has a Community Nutrition emphasis and is designed to enhance knowledge and skills of future nutritionists, dietitians, and other professionals in nutrition practice, thus enhancing the ability of health care practitioners to provide an integrated and cohesive approach to meeting the needs of clients.

The online degree bridges the gap between formal education and professional practice as it prepares the program graduate to be a powerful part of the solution to numerous nutrition challenges.

The program includes 3 hours in Nutrition Research; 6 hours in Nutrition and Metabolism; 15 hours in Community and Lifecycle Nutrition; 9 hours in Contemporary Nutrition; and 3 hours in a capstone experience. ·¬ÇÑÉçÇø graduates will have the opportunity to prepare for a career in nutrition and/or nutrition-related fields by developing marketable skills.
